Recipe: Super Simple & Delicious Acorn Squash

What a beautiful fall day for some oven roasted squash. This is my favorite way to eat squash. This is a super yummy and super simple recipe to make. People who don't like squash tend to actually like this recipe. Enjoy!

Ingredients:
1 Acorn Squash (halved & seeded)
2 teaspoons butter
2 tablespoons apricot or apple preserves
2 tablespoons brown sugar


  


1.) Preheat oven to 350 degrees





2.) Lay the acorn squash on a pan with halved sides down.




3.) Now bake it for 30 minutes!





4.) Take it out of the oven and CAREFULLY flip the halves over like this.




5.) Now add in the butter, perserves, and brown sugar (you can also add a pinch of salt if you like)





6.) Now stick it back in the oven for another 20 minutes!



7.) Pull it out (don't forget to turn off your oven!) and let it cool while you find a dish to put it in (to serve immediatly or to take with you to work for lunch to make everyone wish they thought of that before thay came into work).




8.) Now carfully scrape the insides out into a dish. I also pour the juices into the dish first. We don't want any burns!









9.) And you're done! Either enjoy it now or pack it up & take it to work (like I did). :) Happy Fall!
